Rice, cultural reference essential of Vietnam, constitutes basic food as of its inhabitants of North in the South. Rice is present at the table of the morning at the evening, from January to December, in the countryside as downtown. The meal of a country family is generally composed of three dishes: rice, plants and a little meat or fish. The face powder is used as ingredient of a very great number of dishes (nem, raviolis, crepe, soup tonkinoise, vermiculation, wafer of rice, rice pudding etc…). Rice can be complete, round, long, crushed, scented, sticky etc It can come from the delta or the mountains, harvests of summer or harvests of winter. It can be old (collected the previous year) or new.
